To achieve the best results, I cook the beef brisket at 225 degrees for about 1 hour and 15 minutes per pound.
The time per pound is strictly a guide and cooking times will actually vary.

- About an hour and fifteen minutes per pound if you cook at 250F and don’t wrap.
- About an hour per pound if you cook at 250F and wrap in butcher paper.
- About 45 minutes per pound if you cook at 250F and wrap in aluminum foil.

With foil, your cook will likely take around 8 hours. For me, I’d plan on around putting it on the smoker around 12 hours from the time you want to eat. My flats usually go like this (with the smoker in the 230 range). Smoke for 4-6 hours until 165.
How long do you smoke a 6 pound brisket?
When slow smoking, it is hard to pinpoint an exact cook time. You can estiguess at 1.5 hours per pound but always figure a while longer and use the Foil Towel Cooler or some other holdling temp process to keep the brisket until serving time. You really want the internal temperature to determine when it is done.
